There is something about our Australian wines – the land, the soil, the sun and the people. Red grapes are Australia’s greatest asset. Who after all, could imagine a world without the classic Aussie Shiraz? Our sunshine and fruit character give it the richness and fullness of flavour.
Australian wines are very expressive of the Australian culture and the Australian People who are very friendly, work hard and enjoy their life to the fullest. This enjoyment would not be complete without the good taste of the Australian fine wines – reds, whites, rose, etc - better known as Wines from the New World.
Good wine can be made only from good grapes. Only one species of vine is used to make the wines we drink today. It is VITIS VINIFERA. Note, vitis labrusco, vitis riparia and vitis ripandaria – other species found in USA. Many factors can affect the grapes quality – rich Soil (its good drainage is essential), mild Climate ( grapes cannot grow under +10’’ C), Weather (no frost, hail, strong wind, rain), Viticulture (how the grapes were grown), Viniculture (how the wine is made), Varietal (each grape has a different character). Grapes need to reach a certain level of sugar (baume, or brix in USA) before harvesting. This is different for each variety of grape. As the sugar level rises in warm temperatures, so acid level declines. An ideal wine requires a balance of acid and sugar. Grapes are picked at optimum ripeness to make a good wine. Therefore the work of Viticulturist is very very important.
